We have a clay base and so growing anything is kinda difficult.  We want to grow potatoes but understand that they grow downward.

How can we have potatoes when we don't really have the soil for them?

Build a raised bed.  The potatoes will grow down into it and you can harvest downwards.  Even if you have a large and very tall pot, that would do the trick I think.
